TASTING NOTES
This Cabernet Sauvignon exudes intricate aromas of blueberry and cassis that transition into a cascade of velvety chocolate and raspberry. The flavor profile boldly asserts itself with unapologetic notes of black plum, black currant, and sumptuous dark chocolate, all elegantly complemented by a subtle undertone of vanilla. Bold and assertive, this wine takes no prisoners. It's a true rebel, worthy of the legendary Dennis Rodman.
WINEMAKER NOTES
This Cabernet Sauvignon was harvested from two premium vineyards in the Estrella District of the renowned Paso Robles AVA. The vineyards undergo strong diurnal temperature swings with cold nights and hot days. This variance in temperature allows for even ripening in the fruit as the warm days help foster sugar development, and the cool nights help preserve acidity. Upon harvest, the fruit is cold-soaked for three days before undergoing an extended fermentation.
